Our story:
Behind the name "Domaine du Chat Blanc" lies our little family: Catherine, Stéphane, Paul our son and Bonbon our cat.
Our story begins in London, where we lived for fourteen years following a professional transfer. London is a city of worldwide cultural and economic influence. Our little family fell under the spell of this dynamic capital. But, after a few years, we began to miss our beloved country too much. Especially, it must be said, its good food and fine wines! Wine is a real passion for Stéphane, and he had always dreamed of running a small vineyard in Provence.
This dream became a reality 5 years ago, when we were able to buy an old 18th-century farmhouse surrounded by a 5-hectare AOP Ventoux vineyard of Grenache and Syrah, organically cultivated for 30 years. This vineyard, then run by the Cave Coopérative, is located in Saint-Didier, in the heart of the Comtat Venaissin, at the foot of the mythical Mont Ventoux. It benefits from an exceptional microclimate: sunshine, a dry climate and the Mistral wind, which helps protect the vines naturally.
We quickly set to work to renovate the farmhouse, which had fallen into near-ruin, over a period of 3 years, with the help of local craftsmen, so that this beautiful old building could regain its soul.
At the same time, we restored the vineyard, replacing half the vines that were no longer producing, and lovingly tending the rest.

Respect for nature and the soil
For us, it's essential to be in tune with nature and to adopt the best ecological practices.
So, instead of using chemicals and weedkillers, the vineyard is worked mechanically. For fertilization, chemical fertilizers are banned and replaced by organic amendments using natural green manures, respecting the balance of the soil.

Making the most natural wine possible
After ensuring that the fruit is grown as naturally as possible, we regularly taste the grapes and wait until they are fully ripe before harvesting them by hand, very early in the morning to avoid oxidation.
Gentle vinification is also organic, with a constant desire to limit inputs throughout the winemaking and ageing process, in order to make a wine as natural as possible and encourage the expression of terroir. The only concession is the minimal use of sulphur to ensure good hygiene and wine stability, with only 20% of the amount permitted in organic farming.

The young estate has already produced 2 vintages of Cuvée Première. Our organic "Cuvée Première" is a total success, made from our old vines (50% Grenache and 50% Syrah) producing a concentrated, fruity juice expressing the richness of its terroir.
It has a beautiful garnet-red color, with aromas of black fruits and hints of sweet spices.
Round and structured on the palate, with mellow tannins and good length.
Serve as an aperitif or with charcuterie, grilled meat or cheese.

Guess who inspired our domain name and label?
At home, she leads us by the nose! She knows how to command respect, shares in our joys and sorrows, and occupies a special place in our family.
Our cat Bonbon deserved to become our vineyard mascot!
And so, one day, the "Domaine du Chat Blanc" was created.
